Kupat TAHU Bandung

Rasanya sekarang makanan ini udah gak terlalu populer di Bandung. Zaman sy masih SMA, kebetulan bbrp kali suka jajan makanan ini. Sedikit keluar dari halaman sekolah... pas di seberang taman lalulintas Bandung, nah di situ deh kupat tahu yg menurut sy cukup enak.
Hari pertama long weekend ini... pengen bikin lunch yg rada 'beda'... ketemu resep kupat tahu di majalah Sedap. Ya udah langsung direalisasikan ke wujud 3D. Bahannya simple bgt: ketupat, tahu (sy ganti pake tahu kuning) dan touge... diguyur bumbu kacang dan dilengkapin dgn taburan bawang goreng, kecap manis dan krupuk. mmm Bandung... I miss you soooo much!

2 buah tahu putih bandung, goreng, potong2 kecil ~sy pake tahu kuning.
100 gr taoge, siram air panas
4 buah ketupat, potong-potong
150 gr kacang tanah, goreng, haluskan
350 ml air
5 sdt air asam (dari 2 sdt asam + 5 sdt air)

Bumbu Halus:
4 buah cabe merah
2 siung bawang putih
1/2 sdt terasi
4-1/2 sdt gula merah
1-1/2 sdt garam

Pelengkap:
bawang goreng u/ taburan
kecap manis
kerupuk

1. Saus: aduk rata bumbu halus, kacang tanah, air dan air asam jawa.
2. Masak sampai mendidih dan berminyak. Angkat.
3. Tata potongan ketupat, potongan tahu dan touge.
Siram atasnya dgn saus kacang dan kecap manis.
Taburi bawang goreng dan sajikan dgn kerupuk.

3 BLACK FOREST loaves... for my 33rd bday.

Yg special dari Black Forest ini... mmm bentuknya gak standart~biasanya bulet kan, dan ueenak tentunya~kalo gak percaya tanya aja suamih & anak2ku. Nah kemaren itu, atas request suamihku tertjintah... sy jd bikin bf dgn 3 biji chocolate cake pake cetakan loaf. Sempet terjadi sedikit accident... abis kelar ngebake loaf terakhir, lg sibuk sana-sini, tiba2 si Patrick nyamperin sy sambil senyum bangga sambil ngunyah & mulut belepotan remah2 chocolate cake. Sy nengok ke cake... Ooaahhhh, sy speechless cuma bisa nutup muka (janji hari itu gak boleh marah)..., ternyata Patrik ngambil piso plastiknya, trus manjat kursi dan motong si cake yg masih anget2 wangi di atas wire rack. Akhirnya sy menenangkan diri dan me-mermak cake sempet bopak ujungnya. Nah yg paling khas dari bf itu adalah wangi rum-nya. Berhubung ada anak2 di rumah, jadi 1 loaf tanpa rum (hanya pake cherry syrup), trus yang satunya mild aja, yg satunya 'stronger', tp gak memabukkan lah... :))) yummy,....

Whippy Cream
1 kaleng Black Cherry in heavy syrup
tiriskan (pisahkan cherry & syrup-nya)
Rum (sesuai selera)
Red Cherry
(u/ hiasan)
Dark Cooking Chocolate
(serut~u/ taburan)

Chocolate Cake...
yg paling penting chocolate cake ini kudu empuk dan berpori (spy bisa dipercikin syrup & rum). Sy sendiri selalu bikin pake devil food cake, krn memenuhi syarat empuk, berpori... dan tentu saja, telurnya dikit. Rasanya juga sangat pas, nyoklat bgt. Kemaren itu u/ 1 loaf sy pake 1/2 resep moist devil food cake-nya Martha Stewart. Kalo punya resep Chocolate Cake favorite bisa dipake kog. Yg pasti bukan cake yg padat dan bantat yaah.

Nah Caranya:
*Iris cake jadi 2 atau 3 lapis. (kalo suka yg byk cream-nya bagi 3, kalo sy cuma bagi 2 krn rasanya enek kalo kebanyakan cream-sesuai selera aja deh).
*Ambil 1 lapis cake, letakkan diatas alas datar. Percikin/tuangin black cherry syrup dan rum.
*Olesi atasnya dgn whippy cream dan taburi black cherry yg sudah dibelah 2.
*Taruh lapisan cake berikutnya di atas olesan whippy cream & cherry tadi.
Percikin black cherry syrup dan rum.
*Hias bagian atas dan samping dgn whippy cream, taburi parutan dark chocolate dan hias dgn red cherry.(ini kalo cuma dibelah 2, nah kalo cake diiris 3 lapis, ya lanjutin spt diatas. Kalo dibelah 3 ya black cherry-nya dibagi 2 u/ 2 x lapisan whippy cream bagian dalam)

Dark cooking chocolate, sy lebih suka diparut halus (pake parutan keju). Sy parut pada suhu ruangan biar gak pecah2.
Hiasan bagian atas (whippy cream), u/ bentuk pita sy pake 'leaf' spruit.
Black Forest ini kudu ditaruh di tempat dingin mengingat whippy cream gampang meleleh.

BROWNIE Cupcakes

Brownies sekali2 bisa dibikin ala cupcake gini. Sebenarnya sy rada bosen bikin brownies, kayagnya ampe hafal bgt resepnya. Tp bbrp hari yll temen2 se-bis sekolahnya Patricia minta dibikinin brownies. Kt mrk ke Patris "Could you ask your mom to give us brownies?" Kebetulan sebis itu anak laki semua, cuma Patris yg cantik deh. Dan bbrp kali sy pernah bagi2 brownies u/ mrk. Kata sy ke Patris "Tell them to ask their moms... to make brownies for them" eeeh pulang sekolah jawaban si Patris "Their moms couldn't make brownies". Sampe bbrp hari yll sy ngejempur Patris ke bis, eee anak2 itu tereak2 'Brownies...brownies...!'.
Akhirnya sy coba resep ini, Brownie Cupcakes from Martha Stewart website.
Rasanya rich bgt, gimana enggak, pake campuran cooking chocolate dan cocoa powder.

Makes 12
6 tablespoons unsalted butter
11 ounces best-quality semi-sweet chocolate, coarsely chopped
3 large eggs
1 cup sugar
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa
1/8 teaspoon baking soda
1 cup coarsely chopped walnuts(optional)

1. Preheat the oven to 350°. Line a twelve-count muffin tin with cupcake liners, and spray generously with nonstick cooking spray. Set aside.
2. In a saucepan over low heat, melt the butter and 8 ounces of chocolate. Stir until smooth. Remove from heat, and set aside.
3. In a large bowl, whisk together eggs and sugar. Add flour, cocoa, and baking soda. Stir in the melted chocolate until combined. Stir in remaining 3 ounces of chocolate and nuts if desired.
4. Using a 2-ounce ice cream scoop, fill cupcake liners 3/4 full with batter. Bake until a firm crust forms on the cupcakes, about 20 minutes. Remove to a wire rack to cool, about 10 minutes. Remove cupcakes from pan, and continue to cool on a wire rack.
5. Ice cupcakes with a generous amount of chocolate frosting.~sy gak pake frosting

TIPs... berdasarkan pengalaman~soalnya sy sempet gagal bikin resep ini
*Isi cetakan muffinnya 1/2 atau 2/3 aja,... 3/4 itu kebanyakan terlalu bleber.
**Kalo pengen pake kacang yg ditabur diatasnya, jgn terlalu byk naburnya. Potongannya kecil2 aja. Kalo kebanyakan, jadi berat trus adonannya susah naek.
*** Do not overmix. Aduk secukupnya aja.
****Jgn kebanyakan taroh baking soda, no more than 1/8 tsp.
*****Jgn lupa ayak dulu cocoa powder spy gak ngegumpal.
******FYI, sy pake otang, manggangnya 35 menit. Jd ya sesuaikan dgn oven masing2. Kalau udah test pake tusuk gigi trus masih basah, masukin oven lagi sampe mateng bener.

Mini Vegetable SPRING ROLLs

Kemaren lg bebersih mailbox, nemu resep spring rolls yg dikirim ama Prilly, temen baek sy. Kita cukup lama temenan wkt sama2 tinggal di Msia. Prilly berasal dari Philipine bersuami Canadian. Anyway, Prilly cukup sering bikin spring rolls kalo kita ngadain acara ngumpul2. Ternyata di negara asalnya barang ini namanya juga lumpia... Krn tau sy dan suami seneng ama spring rolls bikinan dia, tiap ada acara dia bikin lebih u/ ngebekelin sy.
Baek banget gak sih? Sy dikelilingi temen2 yg bae2 nih...
~Hi Prilly...how are you? Are you in Kemaman? I miss you!
Akhirnya sy bikin deh vegie spring rolls ini, dgn bahan2 yg ada di kulkas aja. Kekhasan punya Prilly adalah pake labu siam dan keiris kecil keju (tanpa wortel). Yummy bgt. Dibawah ini resep ala dapurku. Apa aja bisa dijadikan isi spring rolls kog. Mo sayuran, ayam/daging cincang, bihun... bebas aja. Sy prefer pake kulit spring roll import (frozen).

Isi: Tumis dgn sedikit minyak 2 bawang putih (dicacah halus) dan 1/2 bawang bombay (cincang kasar) hingga harum. Masukkan segenggam parutan wortel, biarkan hingga layu. Masukkan segenggam tauge yg sudah dibersihkan dan 1/2 genggam kacang polong (sy pake yg beku). Tumis hingga bahan layu, tambahkan garam, merica, minyak wijen dan sedikit kecap asin. Sisihkan, biarkan dingin.
Iris2 keju ceddar (tipis memanjang).
Siapkan kulit lumpia ukuran kecil (ikutin cara pemakaian yg terdapat di bungkusnya).
Gulung satu persatu, ...isi dgn 1.5 sdt bahan isi dan 1 iris keju.
Gulung sambil dipadatkan.

Goreng dlm minyak panas sedang. Jangan terlalu panas, ntar keburu coklat kulit luarnya sedangkan yg bag dalam masih basah.
Sajikan dgn saos sambel,...sy prefer sambal bangkok.

Es TAPE

Begini ceritanya,... hari Sabtu kemaren ada acara Family Day kantornya si Papah. Nah dessert yg tersedia adalah es puter rasa tape ketan hitam (keluaran Diamond). Kita cuma makan 1 cup be2.~mungkin kenikmatannya tuh krn makan be2-nya itu yah? Atau krn kebetulan wkt itu lg panas bgt. Kita sampe ngebahas betapa kita doyan tape2an... krn rasanya yg exotic...Cieee. Anyway krn meninggalkan kesan yg mendalam (hi..hi..hi..) akhirnya Senennya ta bikin puding tape ketan hitam (resepnya sih sama aja dgn puding tape ketan hijau). Krn jadinya byk, sebagian dibikin Es Tape ajah.

Simple bgt ... puding tape ketan hitam dipotong kotak2 ditambahin peuyeum yg juga dipotong kotak2. Trus diguyur sirup cocopandan + air es + sedikit susu kental manis. Kalo suka tambahin es serut. Gak dikasiin santen lagi krn tooh pudingnya dah bersantan. Enak bgt buat dessert kalo lagi panas2 gini. Segeeeerrr... rasanya mmm exotic :))

Pandan CUPCAKEs for St. Patrick's Day.

St. Patrick's Day identik dgn ...something 'green'. Jadi inget Chicago River yg di'hijau'in dalam rangka St Patrick's Day (krn di sana byk Irish imigrant). Begitu juga wkt ditawarin baking class project di sekolah Patricia, begitu dibilangin temanya St.Patrick's Day langsung kepikir yg ijo2 deh. Krn ujung2nya akan didecor ama anak2 dan mereka pun yg akan ngejualinnya (ngumpulin dana u/ Dengue Awareness Campaign), akhirnya sampailah sy pada keputusan membuat Pandan Cupcakes ini.
Resepnya sy adaptasi dari resep Frosted Vanilla Cupcakes-nya Martha Stewart.

Makes 12
1 1/2 cups all-purpose flour (spooned and leveled)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup sugar
2 large eggs
1/2 cup plain yoghurt
1/4 cup homemade pandan flavour *
green food color

1. Preheat oven to 350°. Line a standard (12-cup) muffin tin with paper liners. In a small bowl, whisk together flour, baking powder, and salt; set aside.
2. With an electric mixer, beat butter and sugar until light and fluffy, about 5 minutes. Beat in eggs, one at a time, until combined. Beat in pandan flavour & food color.
3. With the mixer on low speed, gradually beat in flour mixture and yoghurt in alternating batches, beginning and ending with the flour.
Divide batter evenly among prepared muffin cups.

4. Bake until a toothpick inserted in the center of a cupcake comes out clean and the top is springy to the touch, 20 to 25 minutes. Cool 10 minutes in the pan, then turn out onto a rack to cool completely before spreading with frosting.
Note: Yoghurt works in giving these cupcakes a moist crumb and slightly tangy taste.

* Homemade Pandan Flavour dibuat dgn merebus bbrp lembar daun pandan dalam sedikit air hingga mendidih dan wangi. (kurang lebih 15-20 menit).
Akhirnya jadilah 4 lusin Pandan Cupcakes itu dan sy bawa ke sekolahan. Mikir2 buttercream apa yg cocok yah? rasanya jarang bgt pandan cake dikasi filling. Dan sy pun cuma bawa whippy cream. U/ ngedekornya sy bawa green sand sugar plus ta' bikinin bendera2 kecil bertema St Paddy's Day u/ hiasan.

Ternyata seru bgt acaranya ngedecor cupcakes bareng anak2 TK. Sekelas yg mayoritas anak laki itu jadi heboh bgt...Mrk bawaanya pengen makan melulu, padahal cupcakes ini kan mo dijual keesokan harinya. Akhirnya sy potong 1 cupcake u/ 4 org. Belom lagi mrk excited nyobain gula yg bewarna hijau supaya lidah mrk bisa bewarna hijau juga. Tiap kali abis nabur gula mrk ngejilatin gula yg tertinggal di jari2nya. walaahh...

CIRENG

Pertama kali tau ada makanan jenis ini wkt baru pindah ke Bandung (1988). Pertama kenalan sih di penjual gorengan samping sekolah (SMA3), di sekitar jalan Belitung/Kalimantan, Bandung. Tapi ini salah satu gorengan yg selalu ada di penjual gorengan di Bandung. Sebagai anak kost, jajan di luaran itu hal yg sangat lumrah. Jadilah sy pun makin akrab ama Cireng ini.
FYI ajah, Cireng itu kependekan dari Aci (kanji) goreng. Enaknya dimakan selagi panas/anget. Kalo udah dingin...oooh kayag karet!

100 g tepung kanji
1 sdm tepung terigu
75 ml air
½ sdt merica bubuk
1 sdt garam
1 siung bawang putih, parut
30 g kedelai putih, rendam hingga lunak, tiriskan
1 batang daun bawang, iris halus
minyak goreng

Cara membuat:
Aduk tepung dengan air, merica, dan garam hingga rata.
Tambahkan bahan lainnya, aduk rata.
Goreng sesendok demi sesendok hingga kuning dan kering. Angkat dan tiriskan.
Sajikan hangat dengan cabai rawit.
Untuk 10 buah
**usahakan wkt menggoreng minyaknya panas sedang aja, jgn terlalu panas~ntar jadi bentuk serabut2.

Es DOGER

Dulu kala, wkt masih di Bandung, sy pernah baca suatu artikel ttg jajanan khas Jkt. Salah satunya ya Es Doger. Penasaran bgt kayag apa sih Es Doger itu. Akhirnya stelah lulus kuliah dan kerja di Jkt, mulailah sy nyari yg namanya Es Doger. Ternyata... enaaak dan ternyata bokap-nyokap-kaka-ade hingga suamiku ikut tertular doyan Es Doger. Sekarang yg jadi favorit kita Es Doger di Pasar Majestic atau di GKI Pondok Indah.
Bbrp hari ini sy kangen ama Es Doger, bayangkan udah 6 bulan (sejak pindah ke Bppn) gak nyicipin. Mau gak mau kudu bikin sendiri. Berbekal resep dari Dapur Bunda... jadilah weekend ini kita bisa menikmati kelezatan Es Doger.

750 gram es batu diserut
200 gram kelapa muda, serut kasar
susu kental manis
200 gram tape singkong, potong kotak
100 gram ketan hitam rebus *
50 gram pacar cina rebus

BAHAN SIRUP:
400 ml santan kental
200 ml sirup roozen**
100 ml air

Rebus bahan sirup sampai mendidih lalu dinginkan. Masukkan serutan es dan kelapa muda. Aduk rata. Simpan dalam Freezer.
Sajikan es doger dengan irisan tape, 1 sendok makan ketan hitam, 2 sendok teh pacar cina, dan susu kental manis.

* Ketan hitam ini sy ganti dgn TAPE KETAN HITAM.
** Sirupnya, sy pake sirup COCO PANDAN~warna merah.
Sebenarnya feel free aja u/ bikin es doger ini. Kalo suka isinya lebih byk, tambahin sesuai selera. Gak punya byk wkt... beli aja tape ketan hitam, tape singkong juga pacar cina yg dah jadi...kita tinggal nyampur2 aja, plus bikin sirupnya. Gak punya serutan es, blender aja sirup ama es batu secukupnya. Just make it simple and enjoy it!

Spice BISCOTTI

Biscotti is a traditional Italian treat. The crisp slices of biscotti ini biasanya dinikmatin bareng kopi panas dan dicelupkan ke kopi sebelum dimakan. Jadi jgn heran kalo makanan ini agak keras tp berpori2 byk. Begitu abis dicelup di kopi atau minuman anget, akan lebih gampang dimakan tapi gak jd benyek. Resep ini sy dpt dari HerWorld Magazine kalo gak salah edisi July 2005. Salah satu maskapai penerbangan selalu nyediain majalah ini di pesawatnya, kebetulan sy ngeliat jadi ta' embat resepnya,... gak semajalah2nya, berat bow. Kali ini sy bikin satu jar, special for my lovely husband~buat ngopi sore2 di kantor. I baked it with love lho!

1 cup granulated sugar
1 tsp baking soda
1/4 tsp salt
3 eggs
1 tsp vanilla
2-3/4 cup all-purpose flour (sy pake 3 cup)
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 cup finely-chopped slivered peanuts (sy pake 1/2 cup mete)
1 beaten egg
1 tsp water.

1. In a large mixing bowl, stir together sugar, baking soda and salt. Stir in eggs and vanilla.
Stir in flour, spices (cinnamon, cloves & nutmeg) and peanuts. Mix until combined.
2. On a well-floured surface, shape each half into a log about 9 inches long. Place logs about 4 inches apart on a lighly greased cookie sheet. Pat each logs into a flattened loaf about 10 inches long and 2-4 inches wide. Stir together the beated egg and water; brush over loaves.
3. Bake in a preheated oven at 160 C for 30 minutes. Cool on a rack.
4. Cut each loaf into 1/2 inch thick slices. Place slices, cut-sides down on ungreased cookie sheets.

5. Bake in the 160 C oven for 5 minutes. Turn slices over and bake for 5-8 minutes more or until dry and crisp. Remove cookie from pan and cool on a rack

Chocolate Chip 'cookie' CUPCAKE

Ngeliat namanya, kita bertanya2 ini cupcake atau cookie? Si pemilik resep menamakan demikian konon karena bagian atas cup cake ini menyerupai Chocolate Chips Cookie. he..he..
Gue sempetin bikin tadi pagi u/ bekelan anak2 yg mo ikutan papanya ngantor (1/2 hari ajah), sementara nyokapnya mo creambath...uhuuuy! Lumayan enak, empuk bgt dalemnya.

Makes about 2 dozen
1-1/2 cups all purpose flour
3/4 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup light brown sugar
3 large eggs
1 tsp pure vanilla extract
1/3 cup whole milk
8 ounces semisweet chocolate, cut into 1/2 inch chucks (*)

1. Preheat oven to 375 F. Line 2 standard 12-cup muffin tins with paper liners; set aside. Whisk together flour, baking powder, and salt in a medium bowl; set aside.
2. Put butter and sugars into the bowl of an electric mixer fitted with the paddle attachment, and mix on medium-high speed until pale and fluffy. Mix in eggs, 1 at a time and vanilla. Reduce speed to low. Add flour mixture in 2 batches, alternating with the milk. Stir in chocolate chucks with a rubber spatula.
3. Spoon 1/4 cup batter into each muffin cup. Bake until pale golder and a cake tester inserted into centers comes out clean, about 20 minutes. Transfer cup-cakes to wire racks, let cool completely.
Cupcakes can be stored in airtight containers at room temperature up to 3 days.
(*) Sy ganti dgn chocolate chips biasa, sekitar 1/2 cup saja. Pengalaman 2x nyoba resep ini, saran sy sebaiknya coklat chip jangan dicampur dgn adonan dulu, tapi setelah adonan masuk oven sekitar 15 menit-permukaannya udah lebih padat, baru ditaburin chocolate chips atasnya~trus dipanggang lagi. Kalo dari awal dimasukkan, begitu cupcakes keluar dari oven... si chocolate chip semuanya akan tenggelam di dasar cupcake. Mungkin terlalu berat (?)
Sy selalu bikin 1/2 resep sajah, telurnya... pake 2 telur ukuran kecil.
