MUFFIN that taste like donut

Yeahhh... kedengerannya pasti lucu.
Tapi emang inilah judul asli yg ada di buku resep muffin andalan sy, 'Muffin Mania'. Resep yg dimasukkan dlm kategori 'Tea Time' ini sy coba hari Jumat sore kemaren. Rencana u/ snack selama weekend, tp Sabtu sore ini udah abis :) .
Hasilnya, not bad... rasanya mirip2 classic donut, dengan texture muffin. Kalo sebelumnya si Oatmeal Muffin sy kasi bintang 5, muffin ini sy kasi bintang 3.

Krn terpengaruh topping donut modern saat ini, jadi sy nambahin bbrp jenis topping 'praktis' lainnya, dari bahan yg emang dah ada di kulkas. Sy buat bbrp variasi, pake sugar topping (sesuai resep), chocolate ganache, mocca glaze dan strawberry jam filling (ditambahin 1 sdt jam sebelum dimasukin oven) yg kemudian ditaburi sugar donut. Buat yg satu ini, mungkin bisa dicoba jg, masukin jamnya setelah muffin keluar dari oven. Bisa liat caranya di cupcake fun. Sementara u/ yg pake chocolate ganache & mocca glaze, toppingnya jgn dituang di atas muffin, tp muffin yg nyamperin topping dlm bowl.

Satu catatan dari pengalaman kemaren, baking muffin ini gak bisa bertahap. Jadi begitu adonan di masukin dalam cetakan muffin, sebaiknya langsung di-ovenin. Kalo nunggu masukin perbatch, dikhawatirkan masuk oven belakangan bakal bantat.

(*) Salah satu ingredient resep ini adalah 1/3 cup oil. Saya sarankan pake canola oil (corn oil). Memang kalopun pake minyak goreng biasa, gak akan mempengaruhi rasa. Corn oil memang lebih mahal drpd minyak goreng biasa, tp pilihan penting ini adalah demi alasan kesehatan.
"Canola oil is very low in saturated fat and has a very high proportion of monounsaturated fat. So, it is a healthy choice when it comes to oils". (www.mayoclinic.com).

1 3/4 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp cinnamon (~sy pake 1/2 tsp)
1/3 cup oil (*)
3/4 cup white sugar (first amount)
1 egg
3/4 cup milk

sugar topping.
1/2 cup melted butter
3/4 cup white sugar (second amount)
1 tsp cinnamon

In a bowl combine flour, baking powder, salt, nutmeg and cinnamon
In another bowl, combine thoroughly oil, sugar, egg and milk.
Add liquid ingredients to dry and stir only to combine.
~do not overmix!
Bake 350 F for 20-25 minutes

to make sugar 'donut' muffin
Shake muffins out immediately an while hot, dip in melted butter, then sugar and cinnamon.

to make mocca glaze
Sift together 1 cup confectioners' sugar and 1/2 tbsp cocoa powder into a small bowl. In a small bowl, stir 1/2 tsp instant coffee powder in 1/8 cup + 1 tbsp boiling water to dissolve. Pour the coffee mixture into the dry ingredients and stir with a wooden spoon until smooth. Use immediately.

For a delicious variation,
fill tins 1/2 full of batter, put 1 tsp jam on top,
and top it with the rest of the batter.

Kemaren sore sambil sy foto si muffin2 ini, Patricia baru pulang sekolah. Dia ngambil 1 muffin yg masih polos, trus nongkrong di samping sy sambil nyuir2 muffin yg sebelum dia makan di'cocolin' dulu dlm ganache. ...sampe mulut dan jarinya belepotan coklat. Menurut dia itulah cara makan muffin yg paling nikmat. Stelah itu, dia nongkrong di bawah meja yg lagi sy pake nge-foto muffin.

Pizza TARTLET

Ini penggabungan yg unik, antara tart dan pizza.
Sy buat u/ bekel anak2 ke sekolah. Awalnya pengen bekelin pizza, tapi khawatir bakalan keras saat udah mau dimakan. Biasanya sy nyiapi 'perbekalan' ini sebelum jam 7 pagi, sementara snack time biasanya 2-3 jam kemudian. Malah kalo dibekelin u/ lunch, baru 5 jam kemudian bekel ini akan dimakan.
Akhirnya,... sy mutusin mengganti adonan roti pizza-nya dengan tart, yang tetep crunchy sekalipun harus 'nunggu' di lunch box selama bbrp jam.

Adonan tart-nya sy pake resep Pate Brisee-nya Martha Stewart. Simple bgt, tinggal masukin semua bahan dalam food processor, kurang dari 1 menit, adonan dah jadi. Tapi ngulenin pake tangan jg bisa lho, tergantung 'kesiapan mental' ajah :) .
Untuk isinya pake homemade pizza sauce. Usahakan isinya agak penuh (menggunung), biasanya setelah dipanggang agak sedikit 'menurun'. Usahakan bikin sauce-nya agak kental, biar gak merembes ke kulit tartlet. Topping-nya pun dipotong kecil2, ...inget, ini mini tart lho, bukan seukuran pizza 'beneran'.

Pizza Sauce (~isi tartlet)
1 sdm margarin
2 siung bawang putih, cincang
1 bawang bombai, cincang
1 buah paprika hijau, iris 1/2 x 1/2 cm
450 gr tomat, seduh air mendidih, kupas, blender
1 sdm tomato pasta
1/2 sdt oregano
1/2 sdt basil
1 sdt gula pasir
1 sdt garam
1/2 sdt merica
150 gr daging cincang, tumis hingga matang.
(bisa jg diganti tuna)

Panaskan margarin, tumis bawang putih dan bawang bombai hingga harum.
Masukkan potongan paprika. Aduk sebentar, lalu masukkan pure tomat, tomato pasta, oregano, basil, gula, garam dan merica. Setelah tercampur rata, masukkan daging cincang.
Masak hingga adonan kental. Angkat.

Topping, sesuai selera.
Sy pake jamur kancing dan smoke beef,
yang ditumis sebentar.
+ Mozzarella cheese.

Pâte Brisée (Pie Dough)
Makes 1 double-crust or 2 single-crust 9- to 10-inch pies
Pâte brisée is the French version of classic pie or tart pastry.
Pressing the dough into a disk rather than shaping it into a ball allows it to chill faster.
This will also make the dough easier to roll out, and if you freeze it, it will thaw more quickly.


2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
1/4 to 1/2 cup ice water

1. In the bowl of a food processor, combine flour, salt, and sugar. Add butter, and process until the mixture resembles coarse meal, 8 to 10 seconds.

2. With machine running, add ice water in a slow, steady stream through feed tube. Pulse until dough holds together without being wet or sticky; be careful not to process more than 30 seconds. To test, squeeze a small amount together: If it is crumbly, add more ice water, 1 tablespoon at a time.

3. Divide dough into two equal balls. Flatten each ball into a disk, and wrap in plastic. Transfer to the refrigerator, and chill at least 1 hour. Dough may be stored, frozen, up to 1 month.

Untuk bekelan anak2, biasanya kulit tartlet udah sy siapin sehari sebelumnya. Setelah siap dalam cetakan kecil2, masukkan dalam plastic container, dan masukkan kulkas.
Pizza sauce dan toppingnya udah sy siapin dari malem jg, kulkasin.
Keesokan paginya, tinggal ngisi pizza sauce dan toppingnya dlm masing2 kulit tartlet yg masih duduk dlm cetakannya. Sebagian mozzarella parut sy campur dlm sauce, sebagian lagi untuk taburan. Panggang dlm oven 180 C selama 20-25 menit.

Wondrous One-Bowl Chocolate Layer Cake

... for My Son 4th Birthday.
Tidak ada perayaan yg heboh, hanya acara tiup lilin sekeluarga... tapi kehadiran birthday cake adalah wajib hukumnya :). Kali ini sy hanya bikin 1 buah layer chocolate cake (bundar) yg dipotong pada salah satu sisinya hingga kemudian membentuk 1 bowl ice cream. Very simple! but the chocolate cake ... is very moist, rich and yummy.

Tiga hari menjelang ulang tahunnya kita ngadain 'small farewell party' di sekolahnya Patrick (tepat dihari ulang tahunnya-5 February 2007-Patrick masuk sekolah barunya). Dengan resep yg sama dengan birthday cakenya, sy bikin 2 lusin chocolate cupcakes. Hanya party yg sangat sederhana tapi begitu berkesan u/ Patrick dan teman2nya. Cupcake sy masukkan di box kecil transpasran, plus butter popcorn dan candies (yg sebenarnya jg berfungsi menahan cupcake agar posisinya stabil dalam box hingga buttercream gak belepotan).

Siapapun yg pernah membuat brownies atau muffin pasti merasakan betapa nikmat dan mudahnya membuat 'one-bowl dessert' ini. Semua bahan-wet ones, dry ones, nuts, zests & other tidbits- dicampur bersama dalam 1 bowl (bisa dalam 1 mixer bowl, 1 food processor bowl ataupun 1 mangkok besar dengan 1 sendok pengaduk)
~Sy biasa menyebutnya dengan 'produk aduk2'... entah itu brownies aduk2 atau muffin aduk2. Persiapan dan acara bersih2 pun sangat minimal, tapi kepuasannya maximal.
Bikin cake ini pun demikian, semua dicemplung dlm 1 mixing bowl, gak ada teknik khusus, gak perlu a degree in Home Economics, jg gak perlu ikutan a gourmet cooking class :D... gampaaang bgt deh, dengan tingkat kegagalan sangat rendah, dengan hasil sangat memuaskan.
Resep Layer Chocolate Cake ini sebenarnya sudah pernah sy upload dengan title 'One Bowl Chocolate Cupcake'. Tp sy baru menyadari kalau resep ini mirip dengan Hershey's "Perfectly Chocolate" Chocolate Cake~yg sempet jadi favoritku. Kesimpulan sy, Martha Stewart memodifikasi resep asli dari Hershey's. Dan, hasil modifikasinya cukup sukses... sangat pas u/ kita2 yg hampir selalu pake Ducth-process cocoa powder.

2 1/2 cups all-purpose flour
1 1/4 cups Dutch-process cocoa powder
2 1/2 cups sugar
2 1/2 teaspoons baking soda
1 1/4 teaspoon baking powder
1 1/4 teaspoons salt
2 large whole eggs plus 1 large egg yolk
1 1/4 cups milk
1/2 cup plus 2 tbsp vegetable oil
1 1/4 cup warm water

Preheat the oven to 350 F. Coat two 8 by 2 inch round cake pans (*) with nonstick cooking spray. Line bottoms with parchment paper; spray parchment. Set aside.

Into the bowl of an electric mixer, sift together flour, cocoa, sugar, baking soda, baking powder and salt. Attact bowl to mixer fitted with the paddle attachment; add the eggs and yolk, the milk, oil, vanilla and warm water. Beat on low speed until smooth and combined, about 3 minutes; scrape down the sides of the bowl as needed.

Dividing batter between the prepared pans. Bake, rotating pans halfway through, until a cake tester inserted in the centers comes out clean, about 45 minutes. Transfer pans to a wire rack to cool 30 minutes. Invert cakes into the rack; peel off the parchment. Reinvert cakes, and let them cook completely, top sides up.

Using a serrated knife, trim tops of the cake layer to make level. Place one layer on a cake plate, and spread 2/3 cup buttercream on top. Place other cake layer on top. Spread entire cake with remaining buttercream, swirling to cover completely.
